Quinoa is a gluten free grain that can be boiled like rice. It is similar to cous cous with the healthier benefits. To cook quinoa, simply boil it in water with a lid on until soft, similar to how you would cook rice. To make quinoa risotto, lightly fry a chopped onion in butter until golden brown. Add 2 cups of stock and 1 cup of uncooked quinoa and bring to the boil. Stir often. Once the liquid has been absorbed, add more stock, constantly stirring the quinoa, until the quinoa is cooked.
Labneh is so easy to make. Add a teaspoon of salt and a squeeze of a lemon to 1kg of greek yogurt. Wrap the yogurt mixture in a cheese cloth and strain it over a bowl in the fridge overnight. Tie the cheesecloth to a wooden spoon that can be suspended over a bowl. The whey will drain from the yogurt, resulting in a soft cheese like labneh.
Serve it with fragranced oil and spices, like sumac and some fresh herbs. Enjoy it with fresh bread or with vegetables.
